Savory Corn Bread with Sweet Corn Kernels

- 1 cup all-purpose flour
- 1 cup cornmeal or polenta
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1 cup buttermilk
- 1/2 cup sour cream
- 1/4 cup unsalted butter, melted
- 2 tablespoons honey
- 2 large eggs
- 1 cup sweet corn kernels (fresh or frozen)
- 1/2 cup grated cheddar cheese (optional)
- Freshly ground black pepper, to taste
- Fresh parsley or cilantro leaves for garnish (optional)
Instructions
Step 1. Preheat the oven:
Preheat your oven to 400°F (200°C). Grease a 9-inch square baking pan or line it with parchment paper.
Step 2. Prepare the dry ingredients:
In a large mixing bowl, sieve the all-purpose flour, and mix in the cornmeal, baking powder, salt, and baking soda. Set aside.
Step 3. Combine wet ingredients:
In a separate bowl, whisk together the buttermilk, sour cream, melted butter, honey, and eggs until well combined.
Step 4. Mix the wet and dry ingredients
Pour the wet mixture into the bowl with the dry ingredients. Stir gently until just combined. Be careful not to overmix; a few lumps are okay.
Step 5. Add corn kernels and cheese:
Gently fold in the sweet corn kernels and grated cheddar cheese (if using). This will add a burst of sweetness and a delightful cheesiness to the bread. Season the batter with freshly ground black pepper to enhance the flavors.
Step 6. Bake the corn bread:
Pour the batter into the prepared baking pan, spreading it evenly. Place the pan in the preheated oven and bake for approximately 20-25 minutes or until the corn bread turns golden brown and a toothpick inserted into the center comes out clean.
Step 7. Cool and serve:
Once baked, remove the corn bread from the oven and allow it to cool in the pan for a few minutes. Then, transfer it to a wire rack to cool completely. Garnish with fresh parsley or cilantro leaves, if desired.
