Leftovers – Lamb Gyros

Transform leftover slow-cooked Greek lamb roast into succulent Lamb Gyros. A mouthwatering medley of tender lamb, vibrant veggies, and creamy tzatziki—pure Greek delight ready in minutes!

Ingredients

  • 500g leftover slow-cooked Greek lamb roast, shredded
  • 4 pita bread
  • 1 large tomato, diced
  • 1 cucumber, thinly sliced
  • 1 red onion, thinly sliced
  • Fresh parsley, chopped (for garnish)
  •  Tzatziki 1-2 cups

Instructions

Step 1: Prepare tzatziki

Make a half serve of our famous tzatziki recipe HERE

Step 2: Warm Pita Bread

Wrap pita bread in foil and warm in the oven for 5 minutes.

Step 3: Reheat the lamb

In a hot skillet, add a dash of olive oil and  fry the lamb until heated through. 

Step 4: Assemble Gyros

Layer warmed pita with shredded lamb, diced tomato, cucumber slices, and red onion. Drizzle generously with tzatziki.

Step 5: Garnish

Sprinkle fresh parsley over the gyros for a burst of flavor and vibrant color.

Step 6: Serve and Enjoy

Roll the gyros tightly, securing with foil or parchment paper. Serve immediately, savouring the delicious blend of slow-cooked lamb and Greek goodness!
