Smokey Texan Rub

  • 1 tbsp cumin
  • 2 cloves garlic, finely chopped
  • 1 tbsp ground coriander
  • 1 cup brown sugar
  • 2 tbsp smoked paprika
  • 2 red chilli, finely chopped
  • ½ brown onion, finely diced
  • 1 cup beer
  • A few drops of Tabasco sauce
  • ¼ cup honey
  • Salt & pepper


Step 1: Prepare the Smokey Texan Rub

In a bowl, combine the cumin, garlic, ground coriander, brown sugar, smoked paprika, red chilli, and brown onion. Mix well to combine all the dry ingredients.

Step 2: Add Wet Ingredients

Pour the beer, Tabasco sauce, and honey into the bowl with the dry ingredients. Stir until all the ingredients are well combined and form a thick, sticky rub. Season with salt and pepper to taste.

Step 3: Apply the Rub

Pat dry the meat you intend to season with the Smokey Texan Rub. Generously apply the rub all over the meat, making sure to coat it evenly. Massage the rub into the meat to ensure it adheres well.

Step 4: Let it Rest

Once the meat is coated in the rub, cover it and let it rest in the refrigerator for at least 1 hour, or ideally overnight. This allows the flavors to penetrate the meat and enhances the smoky and spicy profile.

Step 5: Cooking

Cook the seasoned meat using your preferred method, such as grilling, smoking, or oven roasting, until it reaches the desired doneness.
