Leftovers – Lamb Gyros

Ingredients
- 500g leftover slow-cooked Greek lamb roast, shredded
- 4 pita bread
- 1 large tomato, diced
- 1 cucumber, thinly sliced
- 1 red onion, thinly sliced
- Fresh parsley, chopped (for garnish)
- Tzatziki 1-2 cups
Instructions
Step 1: Prepare tzatziki

Step 2: Warm Pita Bread
Wrap pita bread in foil and warm in the oven for 5 minutes.
Step 3: Reheat the lamb
In a hot skillet, add a dash of olive oil and fry the lamb until heated through.
Step 4: Assemble Gyros
Layer warmed pita with shredded lamb, diced tomato, cucumber slices, and red onion. Drizzle generously with tzatziki.
Step 5: Garnish
Sprinkle fresh parsley over the gyros for a burst of flavor and vibrant color.
Step 6: Serve and Enjoy
