Crispy Salt and Pepper Chicken Ribs

Ingredients

  • 500g chicken spare ribs
  • Salt and pepper (for marinade)
  • 2 tsp white pepper
  • 3/4 cup cornstarch
  • ½ tbsp chili pepper powder (optional)
  • 3 cloves of garlic (finely minced)
  • 2 eggs (beaten)
  • Oil (for deep-frying)
  • 1 red chili (finely chopped)
  • 1 spring onion (finely chopped, for garnish)

Instructions

Step 1: Marinating the Chicken Ribs

In a bowl, season the chicken spare ribs with salt and pepper. Allow them to marinate for at least 1 hour, or for even better flavour, marinate them overnight.

Step 2: Coating the Chicken Ribs

Just before frying, combine the beaten egg and cornstarch in a separate bowl. Coat each piece of chicken evenly with the egg and cornstarch mixture. Mix well to ensure proper coating.

Step 3: Deep-Frying the Chicken Ribs

In a wok, heat enough oil to immerse the chicken ribs. Once the oil is hot, carefully add the coated chicken ribs in small batches to avoid overcrowding. Deep-fry until they turn golden brown and crispy.

 

Remove the fried chicken ribs from the wok, drain any excess oil, and set them aside to rest for 10-15 minutes.

Step 4: Second Round of Frying

After the resting period, return the chicken ribs to the hot oil and deep-fry them for a second time. This will enhance their crispiness and texture.

Step 5: Preparing the Aromatic Seasoning

In a separate pan, heat 1 tablespoon of oil. Add the minced garlic and chopped red chili. Fry until aromatic.

 

Sprinkle with a pinch of salt and white pepper.

Step 6: Tossing the Chicken Ribs

Remove the pan from heat and add the deep-fried chicken ribs. Toss them well in the aromatic seasoning mixture until they are coated evenly.

Step 7: Garnishing and Serving

Garnish the crispy salt and pepper chicken ribs with finely chopped spring onions. Serve immediately while hot and enjoy this delightful dish as an appetizer or main course.
