Thai Pork Salad

Thai salad is called Laab, also spelled as larb or laap, is a popular dish from Laos and Northern Thailand. It is a vibrant salad typically made with minced meat, herbs, spices, and a tangy dressing. Laab is known for its bold and refreshing flavours, combining elements of spiciness, sourness, and umami.

Whilst we’re using pork in this recipe, you can use any freshly cooked or leftover beef, chicken or pork.

Ingredients

  • Leftover cooked meat (such as chicken, pork, or beef), finely chopped or minced
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1-2 Thai chili peppers, finely chopped (adjust according to spice preference)
  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon toasted rice powder
  • Fresh herbs (such as mint, cilantro, and Thai basil), roughly chopped
  • Lettuce leaves or sticky rice, for serving (optional)

Instructions

Step 1: Prep the Ingredients

Finely chop or mince the leftover cooked meat, ensuring it is in small, bite-sized pieces. Mince cthe garlic, finely chop the shallot, and finely chop the Thai chili peppers. Set aside.

Step 2: Heat the Oil

In a large skillet or wok, heat the vegetable oil over medium heat.

Step 3: Sauté the Aromatics

Add the minced garlic, chopped shallot, and chopped Thai chili peppers to the skillet. Sauté until fragrant and lightly golden, stirring constantly to prevent burning.

Step 4: Add the Leftover Meat

Add the finely chopped or minced leftover cooked meat to the skillet. Stir-fry for a few minutes until the meat is heated through.

Step 5: Prepare the Dressing

In a small bowl, whisk together the fish sauce and lime juice until well combined.

Step 6: Dress the Meat

Pour the dressing over the cooked meat in the skillet. Stir well to evenly coat the meat with the dressing.

Step 7: Add the Toasted Rice Powder

Sprinkle the toasted rice powder over the meat. Stir to incorporate the rice powder into the dish.

Step 8: Add Fresh Herbs

Add the roughly chopped fresh herbs (such as mint, cilantro, and Thai basil) to the skillet. Toss the herbs with the meat until well combined.

Step 9: Serve

Transfer the Laab to a serving platter.
Serve the Laab on its own or with lettuce leaves for wrapping or sticky rice on the side.
