Ingredients

  • 2 lamb racks, frenched
  • Salt and pepper, to taste
  • 2 tablespoons Dijon mustard
  • 1 cup shelled pistachios, finely chopped
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil

Instructions

Step 1: Preheat the Oven

Preheat the oven to 200°C

Step 2: Season and Coat the Lamb Racks

Season the lamb racks with salt and pepper on all sides. Brush the Dijon mustard evenly over the lamb racks, covering them completely.

Step 3: Prepare the Pistachio and Parmesan Crust

In a shallow dish, combine the chopped pistachios, grated Parmesan cheese, and chopped parsley. Mix well to evenly distribute the ingredients.

Step 4: Coat the Lamb Racks

Roll the mustard-coated lamb racks in the pistachio and Parmesan mixture, pressing gently to adhere the crust to the meat.

Step 5: Sear the Lamb Racks

Heat the olive oil in an ovenproof skillet or frying pan over medium-high heat. Place the lamb racks in the pan, fat side down, and sear for 2-3 minutes until the crust is golden brown and crispy.

Step 6: Roast in the Oven

Transfer the skillet or pan with the lamb racks to the preheated oven.


Roast for about 20-25 minutes, or until the lamb reaches your desired level of doneness. (For medium-rare, aim for an internal temperature of 55-60°C

Step 7: Rest and Serve

Remove the lamb racks from the oven and let them rest for 5 minutes to allow the juices to redistribute.
Slice the racks into individual chops and serve them hot.
