Jerk Marinade

Ingredients

  • 4 spring onions, green part only, chopped
  • 1 red chilli, chopped
  • 3cm piece root ginger, chopped
  • 2 tbsp fresh thyme leaves
  • 100ml apple cider vinegar
  • 3 tbsp clear honey
  • 2 tsp ground allspice
  • 1 tsp ground cinnamon
  • 2 tbsp olive oil
  • salt and freshly ground black pepper

Instructions

Step 1: Blend the aromatics

In a food processor, blend the chopped spring onions, red chili, ginger, and fresh thyme leaves until finely chopped.

Step 2: Add the liquids and spices

Add the apple cider vinegar, clear honey, ground allspice, ground cinnamon, olive oil, salt, and black pepper to the food processor.

 

Blend the ingredients until they form a smooth and well-combined marinade.

 

Taste the marinade and adjust the seasoning if needed.

Step 3: Marinade your meat

Use the jerk marinade to marinate your choice of meat, such as chicken or pork, ensuring it is well coated.


Allow the marinated meat to rest in the refrigerator for at least 1-2 hours, allowing the flavors to penetrate.

Step 4: Cook

Cook the marinated meat using your preferred cooking method, such as grilling, baking, or pan-frying, until it is cooked through and has developed a delicious jerk flavor.
