  • 700g chicken breast or thighs, cut into bite-sized pieces
  • 2 eggs
  • 1/2 cup grated parmesan cheese
  • 1/2 cup rice flour
  • 1/2 cup cornflake crumbs
  • 1/2 cup puffed rice
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon sweet paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • Cooking oil, for frying

Instructions

Step 1: Prepare the Coating

In a shallow bowl, whisk the eggs until well beaten. In a separate bowl, combine the grated parmesan cheese, rice flour, cornflake crumbs, puffed rice cereal, chopped parsley, sweet paprika, onion powder, pepper, and salt. Mix well to combine.

Step 2: Coat the Chicken

Dip each chicken piece into the beaten eggs, making sure it is fully coated. Transfer the egg-coated chicken to the bowl with the dry coating mixture. Press the chicken firmly into the coating mixture, ensuring it is evenly coated on all sides. Gently shake off any excess coating.

Step 3: Fry the Chicken Nuggets

Heat enough cooking oil in a large skillet or frying pan over medium heat to cover the bottom. Once the oil is hot, carefully place the coated chicken nuggets in the pan, ensuring they are not overcrowded. Cook the nuggets for about 4-5 minutes per side, or until golden brown and crispy. Remove the cooked nuggets from the pan and place them on a plate lined with paper towels to absorb any excess oil. Repeat the process with the remaining chicken nuggets, adding more oil if needed.
